Ingredients for a gourmet paella:

  • 350g of rice (for 4 people).
  • Lobster as a fish chunk option (better if frozen as it’s cheaper and ready to use). It can be replaced with any other fish, eafood or mollusc.
  • Caldo de Caldero de Santa Pola (our fish broth).
  • Extra Virgin Olive Oil.
  • Garlic and Salt.
  • Spicy bell peppers.
  • Tomatoes (optional)



  • Cut the lobster in small chunks. After this, chop or crush the garlic and live these to the side.
    In a big cooking pot or caldero, add 6 tablespoons of olive oil and make a stir fry with the bell peppers and the crushed garlic (also the tomatoes if you’re adding them).
  • Once the stir fry is ready, add the lobster and mix it with the other ingredients.
  • It’s time to add the rice.
  • Once everything is mixed, add a can of Caldero broth and half a glass of water (for the 375gr can, 2 people) or a whole glass of water for the 750gr, 4 people.
  • Add salt to your liking and let it cook for 20 minutes.
